And this is a recipe on how to make a lemon Meringue Pie

Lemon Meringue pie

170g of sweet short pastry
3 eggs
1 cup of water
The juice and lemon rind of two lemons
1 cup of sugar
1 tablespoon of butter
4 tablespoons of corn flour
4 tablespoons of caster sugar
½ a teaspoon of vanilla essence

Step 1. Roll the pastry out and line a 230mm pie dish and bake at 200oc for 20 minutes, then cool it

For the Filling: Into a double boiler place the yolks of 3 eggs, water, lemon juice and rind, sugar, butter and corn flour. Stir all over boiling water until very thick and cook for 2-3 minutes extra. When quite cold turn onto the cooled baked tart shell.

For the Meringue: Beat egg whites until very stiff then add the caster sugar a little at a time betting well after each addition; now finally add in the vanilla. Spread the meringue over the filling in the dish. Cook at 200oc for 10 to 15 minutes or until golden brown.
